Wild, Free & New

Dear All,

As you may know it already, I'm working on a self-hosted blog with own domain.
It's not easy, but makes me very happy and proud. It's far from being perfectly ready, but I feel, it's on the stage where I can say, I'm ready to launch it!
Concerning older posts, only a couple of them were moved to the new blog, but it's still under process.

Pancake whateverday #5

So #pancakesunday turned to be a pancake Tuesday and finally posting it on Thursday, so... you know what? It's pancake whatever day, enjoy!;)
 
On the menu: Chocolate pancakes, no sugar, no eggs, so it's vegan and super healthy the same time!
 
Lately I'm in love with Minimalist Baker and I used one of their pancake recipe from the 7 ingredients or less cookbook what you can download as well if you subscribe on their newsletter.
Although as always, I've changed hell lot of things, added my own ideas and turned it into a healthy version.
 
 
1 cup wholewheat flour mixed with some ground almond
1 tbsp baking powder
1.5 tbsp xilit
1 cup almond milk
1.5 tbsp grape oil
~15-20 g xilit chocolate or any type of no sugar diet one.
 
 
Combine the dry ingredients first, then add the rest. Cut, or grate the chocolate before adding it into the mixture.
If you have, you can use some nonstick spray on the griddle, otherwise use oil.
 
Flip the pancakes when bubbles appear on top and edges appear dry. Then cook for 1-2 minutes more.
Get ready, no surprise, chocolate made them a bit sticky, but I guess the amazing smell and taste compensate us for all the difficulties.
 
And if you are going for an extra pleasure, serve with a mixture of melted butter & chocolate. In one word, it's yummm.

 
*If you are not particularly looking for a no egg recipe, I would recommend to use one, at least I'll try that way next time.

Easter in snapshots

It's the time of the year what I enjoy a lot.
Painting eggs,decorating the house, visit my family at home, spending time with my loved ones, eating traditional Hungarian food, baking cookies and simply enjoy that spring is knocking on the door. Not that it's knocking too strongly today!;P

This year we decided on creating colourful, shiny, glittery ones... it was so much fun!

Pancake Sunday #4

After feeling so sick on Friday morning, I didn't even go to the cafe on my last working day which is really disappointing actually.
Without this good bye day, it's just weird that suddenly it's over. Ok, ok, it's not that I don't go there anymore, I know my work is not totally over, it's just changing into a different level. I still want to help and do what I can, but won't be there every single day and won't be the smiling barista girl who welcomes guests on an early Monday morning.
That's sad, but good. It was my choice, a hard choice indeed. I'm tired of being tired and I need new challenges. And I have a couple of them already, so although I won't have a daily job, I feel I'm still going to be a busy girl.
I'm truly excited about this new lifestyle. 
But... That post supposed to be about PANCAKES.
So let's talk about it. ;)
 
Today (after an amazingly long sleep, a totally late breakfast, a well deserved visit to Lush) we went to Maramuto Japanese tea house.
It was so perfect to sit there, it was calm and peaceful, sitting by the sunny window... ahh, totally zen feeling! Loved it so much! This is how I imagine a nice Sunday afternoon.
And for sure I'll go back there more often.
But back to pancakes.
Buying matcha to prepare drinks and special cakes, was already on my shopping list, but now that I had a delicious matcha coffee latte I was so inspired to get a small bag of this wonderful green tea powder.
 
 
 
 
 
Of course I was so excited to try it immediately, and as it's Sunday... it was no question.
 I prepared Matcha Pancakes.
 
I used this recipe as an inspiration, but I was trying to change it a bit healthier and also I had to replace a few ingredients I didn't find at home.
 
Here is what I used:
 
1 cup graham flour
1 tbsp xilit
1 tbsp tapioca syrup
2 tbsp matcha (powder)
1/2 tsp baking soda
1/4 tsp salt
1/4 cup ground almond
1/4 cup oat bran
1 large eggs (beaten)
1 cup soy milk
1/4 cup almond milk
2 tbsp grape oil
 
Make a smooth mixture and fry them in a pan. When it's ready, you can use melted butter to flavor the pancakes and/or natural tapioca, plum or maple syrup. Also recommended to slice some fruits, I guess it's a perfect breakfast this way.

(Strawberry)Pancake Sunday #3

I should seriously think about renaming Pancake Sunday into Pancake Monday!;P
This time I was good and prepared them in time, but to sit down, upload & write... that's always an other question. I'm the type of person who takes her time!;)
 
 
These strawberry flavoured pancakes were perfect end of my lovely weekend.
 
I tell you how I prepared them, but as always I would like to remind you that this recipe was spontaneously came to my mind, so I don't have exact quantities. Be creative! ;)
 
(No sugar) Strawberry Pancakes
 
I used:
 
~1,5 dl soy milk
~3-4 tbsp graham flour
~2 eggs
~1 tbsp ground almond
~ 2 big strawberries
~1/2 banana
~1 tbsp xilit
~1 pinch baking soda
~1 pinch salt
~1-2 tbsp grape oil (plus some extra for frying)
 
Mix the ingredients and add any extras if needed.
During baking them my first 2 were too sticky and burned, but finding the right temperature finally helped.
 
 
In the end I prepared the same type of cocoa sauce as last time with adding some extra strawberry pieces and 2 tbsp of strawberry jam (diet one sweetened with Stevia).
I cooked the ingredients on low temperature for a couple of minutes until the sauce was nice and smooth. You can use a blender if you don't like the strawberry pieces, although I think that's the best yummy part.:)
